fantastic book. great recipes and shows step by step instructions. Also gives substitution ideas which is extremely helpful if you can't get certain ingredients.

This is a great book for anyone wanting to experiment with game meats and to expand their culinary repertoire. From a classy bolognese to down home comfort foods like biscuits and gravy, this collection of recipes is sure to satisfy any palate. The tips and suggestions for the recipes are helpful, the processing guides are informative, and the animal flavor profiles are interesting. I grant that there are some fairly complex and time intensive recipes included, but they are so worth it to cook and eat. Highly recommend it.
