About the Author

MELISSA SHARP is the owner of Modern Baker, an organic whole foods bakery focused on creating nourishing and delicious breads and desserts. After recovering from a serious illness through the combined efforts of traditional medicine, natural supplements, and probiotics, she discovered that eating healthily doesn't have to mean sacrificing great taste, and was inspired to launch a bakery that promotes these values. She founded Modern Baker in 2014, which has expanded to include a line of packaged breads and sourdough-only cakes sold at Selfridges.

SALTY SWEET SEAWEED COOKIES
MAKES 30 small cookies EQUIPMENT cookie cutters, baking sheet
 
¾ cup (1½ sticks) unsalted butter, at room temperature
1 cup (packed) (200 g) coconut sugar
2 tablespoons (20 g) seaweed flakes
1 tablespoon (15 g) salt
2 egg yolks
3 tablespoons (45 g) extra virgin olive oil
Scant 2¼ cups (280 g) spelt flour
 
 
 
1 Beat together the butter, sugar, seaweed, and salt by hand or using electric beaters until light and fluffy. Add the egg yolks and olive oil and beat them in. Finally, add the flour and beat until it all combines into a dough.
 
2 Flatten the dough into a disk, wrap it in plastic wrap, and chill it in the refrigerator for at least an hour. This allows the gluten to relax, which makes the dough easier to handle and stops the cookies shrinking when they are baked. This dough will keep for up to 5 days in the refrigerator.
 
3 Preheat the oven to 400°F. Line a baking sheet with parchment paper.
 
4 Remove the dough from the refrigerator and roll it out to about 1/8 inch. Cut out the cookie shapes and place them on the baking sheet.
 
5 Bake for 12 to 14 minutes until golden brown.
 
6 Let the cookies cool and firm up on the sheet for 5 to 10 minutes, then transfer them to a wire rack.
 
 
NUTRITION NOTE
We believe that seaweed is about as nutrient-dense as it gets: it’s a great source of iodine, an often overlooked mineral that many of us are deficient in, as well as magnesium and iron. It has more calcium than broccoli and it is packed with protein. Buy good-quality seaweed and eat in moderation.
